Our TweeTea Boba shop received a special order for 30 egg tarts and 60 cups of Boba tea from a local business.
Three team members, Karen Li, Jenny Wang and Alisa Tong prepared tapioca boba pearls, black tea and brown sugar syrup ahead of time, following the recipe from the commercial Boba tea vendor. Then the team gathered on the afternoon of October 21, 2023, three hours before the event to prepare egg tarts and Boba tea.
Making egg tarts mostly consisted of mixing, pouring ingredients and baking. As for the milk tea, we had an assembly line, where one person would do one or two jobs each. This way we could make cups faster as we could use the time we would have used in transitions instead of making milk tea. There were around 8 jobs: pouring the tea, pouring the heavy cream, putting in the sugar, putting in 2 pieces of ice, shaking it, pouring into the cups, putting 6 pieces of ice into the cups, and finally capping them and putting them on the table. Since there weren’t a lot of people we each had multiple jobs. Our customer enjoyed the delicious egg tarts and Boba tea. The youngest team member, Camilla Gu, a 3rd grader joined us for the first time. She did a fantastic job.
